- 2 1/2 cups self-rising flour
- 2 teaspoons sugar
- 2 cups buttermilk
- 1 egg
- 2 tablespoons bacon drippings or oil
- 1 cup sharp cheddar cheese shredded (could use whatever cheese you like)
- 5 slices bacon cooked crisp and crumbled
Cook bacon and set aside.
Mix together flour, sugar, buttermilk and egg with a spoon. Add drippings, cheese and crumbled bacon.
Spray a 12 cup muffin tin well. Fill cups about half full. Cook in preheated 400 degree oven 25 – 30 minutes until done and golden brown on top.
