Ingredients

  • 2 1/2 cups self-rising flour
  • 2 teaspoons sugar
  • 2 cups buttermilk
  • 1 egg
  • 2 tablespoons bacon drippings or oil
  • 1 cup sharp cheddar cheese shredded (could use whatever cheese you like)
  • 5 slices bacon cooked crisp and crumbled

Instructions

  • Cook bacon and set aside.
  • Mix together flour, sugar, buttermilk and egg with a spoon. Add drippings, cheese and crumbled bacon.
  • Spray a 12 cup muffin tin well. Fill cups about half full. Cook in preheated 400 degree oven 25 – 30 minutes until done and golden brown on top.
