ALMOND TREATS – CHEWY AND CRISPY

Almond treats are a great snack for anytime.
Crust:
1 1/2 cups all-purpose flour
3/4 cup brown sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
1/2 cup butter or 8 tablespoons or 1 stick, softened
1 teaspoon almond extract (can use vanilla extract)
2 egg yolks
3 cups miniature marshmallows
In a large bowl using a mixer combine all crust ingredients except marshmallows. Mix until like coarse crumbs. Press into an ungreased 9 x 13 baking dish. Bake in preheated 350 degree oven 15 minutes. Remove from oven and sprinkle on marshmallows and bake 5 more minutes until marshmallows puff up. Remove from oven and let cool.
Topping:
3/4 cup light corn syrup
1/4 cup butter or 4 tablespoons
2 cups chocolate chips
1 teaspoon almond extract (can use vanilla extract)
2 cups rice krispies cereal
1 cup chopped almonds
In a large bowl combine corn syrup, butter and chocolate chips. Heat about 90 seconds in microwave or until chips are melted and smooth. You can heat on top of the stove. Remove and stir in almond extract, cereal and almonds. Spoon and spread over marshmallows. Makes about 20 to 25 pieces depending on size you cut them. Enjoy!
