These cashew clusters are so easy to make in the microwave and you can make them anytime you want something sweet and salty. This recipe only makes a few but you can double or triple the recipe and make as many as you like. They keep well in a cool place or you can keep them refrigerated. I have not tried freezing them but I see no reason why you couldn’t. They make a great gift for any occasion.
1/2 to 1 cup cashews
About 25 Kraft caramels
1 cup chocolate chips
1 tablespoon shortening, (optional)
Remove paper from caramels and melt in a microwave safe bowl for about 40 seconds or until smooth. Microwaves vary so it may take less or more time. Just keep a watch that they don’t burn. Add cashews to melted caramel and stir. Drop by spoonfuls onto foil or parchment paper on a baking sheet. Put in refrigerator for about 30 minutes. Melt the chocolate chips along with the shortening about 2 minutes in the microwave until smooth. Drop clusters into melted chocolate with a spoon one at a time. Make sure each cluster is covered with chocolate and put back on baking sheet. Refrigerate for about 30 minutes until chocolate hardens. Makes 8 to 10 depending on how big you make yours. Enjoy!
Note: The shortening makes the chocolate easier to work with and gives you a smoother finish on the candy.
