Apple Cranberry Bread - CopyThis bread is so good served with coffee or as a snack just anytime.  The cranberries and nuts give it a nutty, fruity flavor that makes you want to come back for more. A great gift during the holidays, too!

2 eggs
3/4 cup sugar
1/4 cup oil (I use Canola)
3/4 cup all-purpose flour
3/4 cup wheat flour
2 cups apples, peeled and chopped (I used 3 apples)
1 cup dried cranberries
1/3 cup water
1 teaspoon ground cinnamon
1 teaspoon vanilla flavoring
1/2 teaspoon ground cloves
1/2 teaspoon allspice
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped nuts (I used walnuts)                 
In a large bowl whisk together eggs, sugar, oil.  In a smaller bowl pour the 1/3 cup water over the cranberries and let them soak up the water for about ten minutes while you peel and chop the apples.  Combine the cranberries and apples with the oil, eggs and sugar and whisk well.  Add all the remaining ingredients and mix with a large spoon.  Pour into a sprayed loaf pan and bake in a preheated 350 degree oven for 50 minutes. Enjoy!

  1. I made the Apple Cranberry Bread, It was ok but the seasonings were overpowering. If I make this again, I will not put the cloves in and maybe cut the allspice back to 1/8 teaspoon. I could taste nothing but cloves.

      If you don’t like a lot of spices, Linda, you can always start with fewer than the recipe calls for and taste your batter to see if it needs more.

  4. Do you think this could this be made with Splenda? Diabetics in the house and would love to find some like this to make that is low in sugars.

  5. Would you adjust the recipe if using Splenda? There are a few border-line diabetics attending Thanksgiving, these look delicious.

  8. Wonderful recipe! I like the balance of flavors between cranberries and apples. Most of the recipes for cranberry bread include orange – which can overpower the bread. I made it this past weekend for a holiday dinner and everyone raved about it. definitely a winner !
