Caramel Popcorn Everyone loves popcorn.  This recipe is easy to make in the microwave and your children will love it.  Make some popcorn to have while watching sporting events or just as a nightly treat.  This is a great family project.

1 regular size microwave bag of popcorn
1/2 cup brown sugar
1/4 cup margarine
2 tablespoons light corn syrup
1/4 teaspoon salt
1/2 teaspoon vanilla
1/4 teaspoon baking soda
brown paper bag
Cook popcorn according to microwave directions on box and set aside.  In a 2 quart glass casserole dish combine sugar, butter, corn syrup, salt and vanilla.  Heat for 3 minutes in microwave (I covered the bowl with Saran wrap).  Remove and stir.  Return to microwave and cook for another minute.  Remove from microwave and stir in baking soda.  Pour cooked popcorn into brown paper bag, pour caramel over the popcorn.  Fold the top down good on the bag, shake well, put in microwave for 30 seconds.  Remove bag, shake, flip and cook for 30 more seconds.  Dump into a bowl to cool. This tastes great.  Enjoy!
Note:  I use Kroger giant size lunch bags to make this caramel corn.  They come 50 to a package.  Microwaves will probably vary on the time, too.  Be careful not to over cook.  That’s why I do it for 30 seconds each time.

  2. Happy Popcorn Day, Judy! I saw a news report last night about that and they showed this huge bag of buttery popcorn, so, of course, we had to have some right away. 🙂 This looks great—like fresh-made Cracker Jacks!
