3cupspeeled and chopped fresh tomatoes or 114 ounce can diced tomatoes
2cupschopped fresh okracould use frozen
1cupfresh or frozen corncould use canned
1teaspoonsalt
2teaspoonsbrown sugar

1teaspoonminced garlic
1/2teaspoonCajun seasoningoptional
few drops hot sauce
Instructions
Brown sausage, green onion and green pepper in bacon drippings. Add all the remaining ingredients and simmer covered 15-20 minutes until okra is tender. Serve over rice. Makes 6 to 8 servings.
Notes
You could add some fresh zucchini to this recipe, too. Just chop up a cup of zucchini and add when adding the vegetables.
