Ingredients

  • 1 12 ounce package smoked sausage, sliced
  • 1 to 2 tablespoons cooking oil
  • 1 cup chopped green onion
  • 1 large green pepper seeded and chopped or about 1 cup
  • 1 4 ounce can green chilies, drained
  • 2 cloves of garlic peeled and chopped
  • 1 14.5 ounce can diced tomatoes
  • 1 14.5 ounce can beef broth
  • 1 cup uncooked macaroni or whatever pasta you like
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon cumin

Instructions

  • Brown sausage, green onion, peppers and garlic in cooking oil. Drain, if needed. Add green chilies, tomatoes, beef broth, uncooked pasta, black pepper, salt and cumin. Simmer uncovered for 20 to 25 minutes until pasta is cooked.
