Sausage Egg McMuffin Casserole

So easy and great for a weekend morning. You can prepare this in advance and it's great with maple syrup!

Ingredients

  • 4 English Muffins split in half
  • 1/2 lb of cooked pork breakfast sausage (8 ounces)
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1 1/4 cup milk I used 2%
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  • Cook sausage, drain and set aside.
  • Grease an 8X8 baking dish. Take each slice of english muffin and cut into pieces. About 6 pieces a slice.
  • Add half of the pieces to the bottom of the baking dish, cover with half of the cooked sausage, and half of the cheese. Repeat with another layer of english muffins, sausage and cheese.
  • In a bowl, whisk together, eggs, milk, salt and pepper. Once combined pour over the casserole.
  • Cover with plastic wrap and let chill in the refrigerator for at least an hour. (You can let sit overnight in the refrigerator.)
  • Bake at 325 degrees for 45-50 minutes.
