Ritzy Ham, Cheese Pasta Casserole

Great way to use leftover ham!

Ingredients

  • 2 1/2 cups bow tie pasta cooked al dente according to package directions and drained
  • 1/2 cup chopped green onion
  • 1 cup frozen peas
  • 2 cups chopped cooked ham
  • 2 cups shredded triple cheddar cheese divided (I get this cheese at Walmart. It is a combination of Vermont cheddar, sharp and mild cheddar)
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 2 teaspoons spicy brown mustard
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 cup milk
  • splash hot sauce
  • 20 Ritz crackers crushed
  • 3 tablespoons butter melted

Instructions

  • Cook pasta according to package directions, drain. In a bowl whisk together the sour cream, mayonnaise, mustard, black pepper, salt, garlic powder, milk and hot sauce. In a large bowl combine the pasta, onion, peas, ham and 1 cup of the shredded cheese. Pour the mayonnaise mixture over the ham mixture and toss.
  • Spray a casserole dish with cooking spray and add the ham and pasta mixture. Sprinkle on the other cup of shredded cheese. Crush the 20 Ritz crackers and toss with the melted butter. Spread the cracker crumbs on top of the shredded cheese. Bake in preheated 350 degree oven for 25 to 30 minutes.
