Pumpkin Pecan Cobbler

This is an easy cobbler that is fabulous for the holiday season!

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup white granulated sugar
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ginger
  • 1 cup 100% pumpkin
  • 1/4 cup oil I used Olive
  • 1 teaspoon vanilla extract
  • 1/4 cup evaporated milk can use regular milk

Topping:

  • 1 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 3/4 cup chopped pecans or walnuts
  • 1 1/2 cup boiling water

Instructions

  • Whisk together the flour, sugar, baking powder, salt and spices. Stir in oil, pumpkin, vanilla extract and milk with a spoon. Spray a 7 1/2 x 11 baking dish or 2 quart baking pan with cooking spray and spread mixture into dish. Mixture will be thick. Make topping below and sprinkle over this mixture.

Topping Instructions:

  • Whisk together brown sugar and ground cinnamon and spread over pumpkin mixture. Sprinkle on nuts. Pour boiling water over all and do not mix.
  • Bake in preheated 350 degree oven for 40 to 45 minutes just until top is cooked. Bottom will be a sauce. Makes one cobbler or about 8 large servings.
