Pumpkin Pecan Cobbler

- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup white granulated sugar
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ginger
- 1 cup 100% pumpkin
- 1/4 cup oil I used Olive
- 1 teaspoon vanilla extract
- 1/4 cup evaporated milk can use regular milk
Topping:
- 1 cup brown sugar
- 1 teaspoon ground cinnamon
- 3/4 cup chopped pecans or walnuts
- 1 1/2 cup boiling water
Whisk together the flour, sugar, baking powder, salt and spices. Stir in oil, pumpkin, vanilla extract and milk with a spoon. Spray a 7 1/2 x 11 baking dish or 2 quart baking pan with cooking spray and spread mixture into dish. Mixture will be thick. Make topping below and sprinkle over this mixture.
Topping Instructions:
Whisk together brown sugar and ground cinnamon and spread over pumpkin mixture. Sprinkle on nuts. Pour boiling water over all and do not mix.
Bake in preheated 350 degree oven for 40 to 45 minutes just until top is cooked. Bottom will be a sauce. Makes one cobbler or about 8 large servings.
