Loaded Baked Potato Soup - Crock Pot Recipe

This loaded baked potato soup is super easy to make and wonderful on a cold day!

Ingredients

  • 6 or 7 medium to large potatoes peeled and cut into chunks
  • 2 cups chicken broth
  • 1 small onion chopped
  • 2 teaspoons minced garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 8 ounces cream cheese
  • 1.5 cups heavy cream

Instructions

  • Add chopped potatoes, onions, chicken broth, minced garlic, salt and pepper to the crock pot.
  • Cook on high for 4 hours or low for 6-8 or until potatoes are soft.
  • When the potatoes are done, add the cream cheese, cheddar cheese and heavy cream.
  • With a potato masher you can blend the soup leaving some small chunks. This is when you will make the soup the way you like it, chunky or more soupy.
  • Top with the topping you enjoy, such as bacon, cheese and chives.
