Cinnamon Sugar Butter Swim Biscuits

These Cinnamon Sugar Butter Swim Biscuits are so easy to make and a wonderful way to start the day. They are thick and dense and delicious!

Ingredients

  • 2 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • ¼ teaspoon ground cinnamon
  • ¼ cup light brown sugar
  • 2 cups buttermilk
  • 1 teaspoon vanilla extract
  • ½ cup 1 stick butter (can use unsalted) - melted

For the topping:

  • 3 tablespoons granulated sugar
  • ¼ teaspoon ground cinnamon

Instructions

  • Preheat oven to 450 degrees. Spray a glass or ceramic 8x8-inch or 9x9-inch baking dish with nonstick spray. Add melted butter to the bottom of the dish.
  • In a medium bowl, mix together flour, brown sugar, baking powder and ground cinnamon.
  • Pour in buttermilk and vanilla extract. Stir until combined, don't overwork the dough. If your dough is dry add more buttermilk.
  • Add biscuit dough to dish on top of the melted butter. Use a spatula or your hands to spread out dough.
  • Cut the dough into 9 squares. You may not be able to cut them all the way through. This will help with cutting later when the biscuits are baked.
  • Mix together the topping ingredients and sprinkle over biscuits.
  • Bake on 450 for about 25-30 minutes. If they are looking to brown you can tent them with foil. You can also rotate them half way through for even cooking. Enjoy!
