Chocolate Cobbler

Ingredients

Cake:

  • 1 cup all-purpose flour
  • 3/4 cup white granulated sugar
  • 3 tablespoons 100% pure cocoa
  • 2 teaspoons baking powder
  • 1/2 cup evaporated milk can use regular milk
  • 2 tablespoons olive oil can use any cooking oil
  • 1 1/2 teaspoons vanilla

Topping:

  • 1/4 cup 100% pure cocoa
  • 1 cup brown sugar
  • 1 3/4 cups hot water

Instructions

  • Whisk together flour, white sugar, 3 tablespoons cocoa plus the baking powder in a bowl. Add milk, oil and vanilla extract. Mix with a spoon until all ingredients are wet. Batter will be thick.
  • Spread in the bottom of an 8 x 8 or 9 x 9 baking dish.
  • In a bowl whisk together the 1/4 cup cocoa and the brown sugar. Sprinkle over the batter in the baking dish.
  • Pour the hot water on top and bake in a preheated 350 degree oven for 35 to 40 minutes.
  • Serve warm with ice cream on top.
  • Makes about 9 servings
