Caramel Pecan Bars

Ingredients

  • 1.5- 2 cups of vanilla wafers, crushed enough of crushed vanilla wafers to cover the bottom of the pan, you may need more.
  • 2 tablespoons of sugar
  • 3/4 cup butter melted
  • 1 14 ounce can sweetened condensed milk.
  • 1 egg
  • 1 teaspoon of honey
  • 1 cup of butterscotch chips
  • 1.5 cups of pecans chopped

Instructions

  • Preheat oven to 350 degrees. Combine crushed vanilla wafers, sugar and butter in a bowl. Press into a greased 9X13 baking pan. Bake for 8 minutes, remove from oven and let cool about 10 minutes.
  • In a small bowl beat (with a whisk or spoon) the condensed milk, egg and honey. Stir in butterscotch chips and pour over vanilla wafer mixture. Top with pecans and bake for 20-22 minutes.
  • Let cool completely before cutting. I keep them in the refrigerator.
