- 2 15.5 ounce can hominy, rinsed and drained (I use one white and one yellow can of hominy)
- 5 slices bacon cooked and drained
- 2 tablespoons bacon drippings
- 1/2 cup chopped green onion or regular onion
- 1/2 cup chopped sweet green pepper
- 1/2 cup chopped celery
- 1 10 ounce can diced tomatoes with green chilis
- 1/4 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1/2 teaspoon Cajun seasoning
Cook the bacon in a skillet, remove, drain and set aside saving a couple tablespoons of the drippings. Add the onion, green pepper and celery to the skillet and cook until tender. Pour in drained hominy and tomatoes with green chilis. Add garlic powder, salt, black pepper, bacon drippings and Cajun seasoning. Cover and simmer for about 15 minutes. Crumble cooked bacon on top.
