Black Midnight Cake

Ingredients

  • 2 1/4 cups all-purpose flour
  • 3/4 cup 100% cocoa You can use dark chocolate cocoa if you want this really black
  • 1 1/4 teaspoons baking soda
  • 3/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 1/2 cups sugar
  • 3/4 cup butter or 12 tablespoons softened
  • 2 eggs
  • 3/4 cup water
  • 3/4 cup black coffee
  • 1 teaspoon vanilla extract

Glaze:

  • 1 cup powdered sugar
  • 2 to 3 tablespoons milk
  • 1 teaspoon vanilla extract (optional)

Instructions

  • Whisk together the flour, cocoa, baking soda, salt and baking in a bowl. Set aside. Cream the sugar, butter and eggs in a large bowl using mixer. Add flour mixture to creamed mixture along with water, coffee and vanilla extract. Mix with mixer. Spray a 9 x 13 baking pan with cooking spray, add cake batter and bake in preheated 350 degree oven for 40 to 45 minutes until center tests done. Makes 1 cake. You can add the glaze or frost with your favorite frosting.

Glaze Instructions:

  • Mix together with wire whisk and sprinkle over cooled cake.
