Vanilla Maple Cookies

Ingredients

  • 1/2 cup shortening I used Crisco
  • 1/4 cup butter or 4 tablespoons softened
  • 1 cup brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon maple extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup vanilla chips
  • 1/4 cup pecan pieces

Frosting Ingredients for Cookies:

  • 2 tablespoons butter softened
  • 2 cups powdered sugar
  • 1 teaspoon maple extract
  • 3 tablespoons milk
  • 1 3/4 cups pecan halves

Instructions

  • Cream shortening, butter, brown sugar with mixer. Add egg, vanilla and maple extracts and continue mixing.
  • In a separate bowl whisk together flour and baking soda then add to cream mixture and mix until all ingredients are incorporated.
  • Stir in vanilla chips and pecan pieces with a spoon. Drop by tablespoons onto an ungreased baking sheet two inches apart.
  • Bake in a preheated 350 degree oven for 10 minutes or until brown on tops.
  • Makes about 2 1/2 dozen cookies. Cool and add frosting.

Frosting Instructions

  • Cream butter and sugar. Add maple extract and milk using mixer. Can add more milk if needed. Frost cookies. Top each cookie with a pecan half.
