Succotash Pasta Salad is a wonderful southern side dish. Many traditional succotash dishes include meat, so we added ham to this one. You can easily make this a meatless dish if you like.

Ingredients
112 ounce package Southern Style Fordhook frozen Lima Beans
3/4cupwater
1 1/2cupsfrozen corn
2cupsuncooked garden rotini pastacooked according to package directions to al dente (could use any pasta you like)
1cupchoppedcooked ham
4or 5 bacon slicescooked till crispy and crumbled
1/2cupchopped green onion
1/2teaspoonsalt
1/4teaspoonblack pepper
1teaspooncelery seeds
1tablespoonsugar
1tablespoonwhite vinegar
1/2cupmayonnaise or could use Miracle Whip
Instructions
Combine lima beans, corn and water. Microwave 10 minute or until beans are soft and drain. Combine beans and corn with pasta, ham, bacon, onion, salt, pepper, celery seeds, sugar, vinegar and mayonnaise in a large bowl. Refrigerate several hours or overnight before serving. Makes 6 cups or servings.
Notes
You can add shredded cheese or chopped tomatoes to this salad.
