No Bake Butterscotch Cookies

These No Bake Butterscotch Cookies are so easy to make and absolutely delicious!

Ingredients

  • 2 cups of white granulated sugar
  • 3/4 cup of butter
  • 2/3 cup of evaporated milk
  • 1 3.4 ounce box of instant butterscotch pudding
  • 3.5 cups of quick cooking oats uncooked
  • 1/2 cup of pecans chopped
  • 1 cup of toffee chips

Instructions

  • Add sugar, butter and evaporated milk to a saucepan over medium heat, continue to stir until it reaches a roiling boil.
  • Remove from heat and stir in oats and dry pudding.
  • Let sit for a few minutes to cool.
  • Next add in chopped pecans and toffee bits and stir.
  • Line a cookie sheet with wax paper and drop spoon size amounts onto the sheet.
  • Let cool and enjoy.
