Lemon Chess Bars

A classic Lemon Chess Bars recipe with a buttery crust and sweet-tart lemon filling. Easy, crowd-pleasing dessert perfect for picnics, parties, & summer baking.

Ingredients

Crust

  • 15.25 oz. lemon cake mix
  • ½ cup of butter melted
  • 1 large egg

Topping

  • 8 oz. cream cheese softened
  • ½ cup butter soft or melted
  • 3 eggs
  • 3 cups of powdered sugar
  • ¼ cup lemon juice

Instructions

  • Preheat oven to 350°F and grease a 9x13-inch baking pan.
  • DO NOT make the cake according to the directions on the box. In a medium bowl, stir together the cake mix, one egg, and the melted butter.
  • Press the mixture into the bottom of the pan. This makes the bottom layer of the chess bars.
  • Next, add cream cheese to the same bowl and beat until smooth and creamy. Add butter and mix to combine.
  • Add in eggs until they are thoroughly mixed in. Stir in lemon juice and powdered sugar.
  • Pour this mixture over the crust layer.
  • Bake for 40-45 minutes. When the edges begin to brown, but the center is still a bit jiggly, it is done.
  • Allow to cool at room temperature for at least an hour, dust with a little powdered sugar, cut, and serve.

Store these in an airtight container in the refrigerator.
