Italian Sausage Tortellini Soup

- 1 1 lb of ground mild Italian sausage or Italian style ground turkey
- 1/2 yellow onion diced
- 1 28 ounces can of petite diced tomatoes
- 2 tablespoons of tomato paste
- 3 cups of chicken broth
- 2 teaspoons of minced garlic
- 1 teaspoon of dried basil
- 1/2 teaspoon of oregano
- 1/2 teaspoon of mustard powder
- 1/4 th teaspoon of black pepper
- 1 cup of heavy whipping cream
- 2 cups of fresh spinach
- 1 20 ounce bag of refrigerated cheese tortellini
- Parmesan Cheese for topping
In a dutch oven over medium heat brown sausage or turkey, about 8 -10 minutes and drain off any grease.
Next add diced onions and cook for 3 minutes over medium heat. Add diced tomatoes, tomato paste, chicken broth and all of the seasonings. Let simmer 15-20 minutes.
Add tortellini, whipping cream and fresh spinach. Simmer around 10 minutes or until the spinach is wilted and the tortellini is tender.
Garnish with Parmesan cheese.
