Iron Skillet Apple Cake

This Iron Skillet Apple Cake is a wonderful way to enjoy apples. No mixer needed and comes together quickly.

Ingredients

Cake Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 cup white granulated sugar
  • 1 stick or 8 tablespoons or 1/2 cup butter melted
  • 1 1/4 cups buttermilk
  • 2 eggs
  • 2 teaspoons vanilla extract

Mixture for Tossing Apples:

  • 4 cups chopped apples or about 4 medium apples peeled and chopped (I used Gala apples)
  • 1/2 cup white granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  • Whisk together the flour, baking powder, baking soda, cinnamon and sugar in a large bowl. Stir in butter, buttermilk, eggs and vanilla extract with a spoon. In another smaller bowl mix together the second 1/2 cup sugar, ground cinnamon and nutmeg and toss your chopped apples in the mixture.
  • Spray your skillet or baking dish with cooking spray and spread half the cake mixture in the pan. Add half the chopped apples on top of the cake mixture and cover with the other half of the cake mixture. Sprinkle last half of the apples on top. Bake in preheated 350 degree oven for 40 to 45 minutes or until the center of the cake tests done.
