Ingredients

pound
mild Italian ground sausage
1
small onion
chopped, or 2 teaspoons onion powder
1
clove
of minced garlic

teaspoon
Italian seasoning
1
tablespoon
minced fresh parsley or 1 teaspoon of dried

of thinly sliced zucchini
3
large eggs

cup
of shredded or grated Parmesan cheese

cup
of Bisquick baking mix
1/2
teaspoon
salt

teaspoon
black pepper
1/3
cup
of oil
canola, vegetable, or olive
Instructions
Combine Italian sausage, onion, minced garlic, Italian seasoning and parsley in a skillet on top of the stove. Brown and drain well.
Combine sliced zucchini, eggs, cheese, baking mix, salt, pepper and oil in a bowl and mix together.
Add cooked and drained sausage and continue mixing until all ingredients are wet.
Pour into a 9 inch deep dish pie plate. Bake in a preheated 350 degree oven for 30 to 35 minutes until begins to brown on top.
Makes 6 to 8 servings.
Notes
Can make this pie without the meat or could use ground beef or ground turkey in the recipe. Could change the cheese to your preference.
