Ingredients

  • 1 1/2 cups cooked chicken cubed
  • 2 cups cheddar cheese shredded
  • 1 12 ounce package frozen chopped broccoli, thawed and drained
  • 1/2 of a medium onion chopped
  • 1 1/4 cups milk I used 2%
  • 3 eggs
  • 1/4 cup biscuit baking mix I used Bisquick
  • 1 teaspoon salt can use more or less
  • 1/2 teaspoon black pepper can use more or less
  • Extra shredded cheddar cheese for top of pie optional (I used about 1/2 cup on top)

Instructions

  • Combine the chicken, cheese, broccoli and onion in a bowl. Spread in a sprayed 9 or 10 inch pie pan.
  • In another bowl using a mixer, beat together the milk, eggs, baking mix, salt and pepper.
  • Pour this mixture over the chicken in the pie plate.
  • Bake in a preheated 400 degree oven for 40 to 45 minutes until center tests done.
  • Remove from oven and sprinkle on extra cheese. Let stand until melted or return to oven for about five more minutes.
  • Makes about six to eight servings.

Notes

If using a nine inch pie plate, you might want to put a baking sheet under the plate in case pie should run over a little in the oven. I used a nine inch and mine did not run over but I used the baking sheet just to be on the safe side.
