Iced Oatmeal Raisin Cookies
These old fashioned iced oatmeal raisin cookies are amazing! Such wonderful reviews and always a treat! The icing keeps these cookies really moist.

- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 2 cups old-fashioned rolled oats
- 1 cup shortening I used Crisco
- 1 cup white granulated sugar
- 1/2 cup brown sugar
- 3 eggs
- 1 1/2 teaspoons vanilla extract
- 1 cup raisins
Glaze Ingredients:
- 2 cups confectionery sugar
- 5 to 6 tablespoons milk
Whisk together the flour, baking powder, baking soda, cinnamon, salt and rolled oats in a large mixing bowl.
Cut in shortening, mixing until mixture resembles coarse crumbs.
In a smaller, using a mixer, cream together the white sugar, brown sugar, eggs and vanilla extract.
Add this to the flour mixture and mix well with mixer. Fold in raisins with a spoon. Make balls about the size of a small walnut and place on ungreased cookie sheet.
I use the bottom of a drinking glass dipped in sugar to mash the cookies out flat.
Bake in a preheated 350 degree oven for 10 to 12 minutes. Makes about 4 dozen.
