Iced Oatmeal Raisin Cookies

These old fashioned iced oatmeal raisin cookies are amazing! Such wonderful reviews and always a treat! The icing keeps these cookies really moist.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 2 cups old-fashioned rolled oats
  • 1 cup shortening I used Crisco
  • 1 cup white granulated sugar
  • 1/2 cup brown sugar
  • 3 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 cup raisins

Glaze Ingredients:

  • 2 cups confectionery sugar
  • 5 to 6 tablespoons milk

Instructions

  • Whisk together the flour, baking powder, baking soda, cinnamon, salt and rolled oats in a large mixing bowl.
  • Cut in shortening, mixing until mixture resembles coarse crumbs.
  • In a smaller, using a mixer, cream together the white sugar, brown sugar, eggs and vanilla extract.
  • Add this to the flour mixture and mix well with mixer. Fold in raisins with a spoon.  Make balls about the size of a small walnut and place on ungreased cookie sheet.
  • I use the bottom of a drinking glass dipped in sugar to mash the cookies out flat.
  • Bake in a preheated 350 degree oven for 10 to 12 minutes.  Makes about 4 dozen.

Glaze Instructions:

  • Whisk together and dip tops of cooled cookies in frosting. You can add more milk or sugar until you reach the consistency you like for frosting.
