Ingredients

  • 1 stick butter or 1/2 cup or 8 ounces
  • 1 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/3 cup buttermilk
  • 1/2 cup honey

Instructions

  • Heat the butter in a pan on top of the stove on medium heat until turns a brown or amber color. Stir to keep from burning. Takes about 5 minutes. Remove from stove and set aside.
  • Combine yellow cornmeal, flour, baking powder, baking soda, salt, eggs, buttermilk and honey. Mix well with spoon. Stir in browned butter. Spray an 8 x 8 baking dish and add cornbread batter.
  • Bake in a preheated 400 degree oven for 30 minutes until brown on top. Serve warm with butter. Makes about 6 to 8 servings.

Notes

Could use maple syrup in place of the honey
