Easy Oyster Fritters

Ingredients

  • 2 cups of fresh oysters or 2 (8 ounce cans) oysters, drained and rinsed, chopped
  • 2 eggs
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt
  • pinch cayenne
  • 1/4 cup finely chopped onion
  • 1 teaspoon garlic powder
  • 1 cup all-purpose flour
  • oil for frying

Instructions

  • Whisk together flour, garlic powder, chopped onion, cayenne, salt and pepper in a bowl. Combine chopped oysters and eggs in another bowl. Mix with spoon.
  • Pour into flour mixture and mix to combine all ingredients until wet. Drop each spoonful of the mixture into hot oil and cook until brown and crispy.
  • Drain on paper towers. Makes about 12 to 15 fritters depending on the size you make them.
