Easy Mexican Rice

Simple Mexican rice, perfect addition to any meal.

Ingredients

  • 1 cup long-grain white rice
  • 1/4 cup cooking oil
  • 1/3 to 1/2 cup onion chopped
  • 1 teaspoon minced garlic
  • 1 (14.5 ounce) can chicken broth or about 2 cups
  • 1 (8 ounce) can tomato sauce or 1 cup salsa (can use 1/2 cup tomato sauce and 1/2 cup salsa)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Dried or fresh cilantro optional

Instructions

  • Rinse rice several times and drain. Heat oil in skillet on top of the stove. Add rinsed rice, onions and garlic. Cook until rice is browned stirring often.
  • Stir in chicken broth, tomato sauce or salsa, cumin and chili powder. Bring to boil and turn down to simmer. Cover and let cook about 25 minutes or until rice soaks up wet ingredients.
  • Remove and fluff the rice with a fork. Add salt and pepper to taste. Can garnish with cilantro. Makes 4 to 6 servings.
