Easy Lemon Loaf Cake

Ingredients

Cake ingredients:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 eggs
  • Zest from one lemon or about 2 tablespoons of lemon zest
  • 1 cup white granulated sugar
  • 3/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 1/2 teaspoons lemon extract
  • 1 cup buttermilk

Drizzle Ingredients:

  • 2 tablespoons lemon juice
  • 2 tablespoons white granulated sugar

Glaze Ingredients:

  • 1/2 cup powdered sugar
  • Milk

Instructions

  • Whisk together flour, salt, baking powder, and baking soda in a mixing bowl. In another bowl, combine eggs, lemon zest, white sugar, olive oil, lemon juice, lemon extract, and buttermilk using a mixer. Combine with flour and mix with a mixer. Spray a 9 x 5 bread pan and add batter. Bake in a preheated 350-degree oven for 45 to 50 minutes or until center tests done. Before removing from pan while still hot, add drizzle below. Cool for 10 minutes and remove from pan.

Drizzle Instructions:

  • Heat to a boil in the microwave or on top of the stove. Remove and poke holes in the hot cake before removing from pan and drizzle over cake. Remove cake after 10 minutes and let cool before adding glaze.

Glaze Instructions:

  • Combine till of pouring consistency and pour over cooled cake.
