Cranberry Celebration Salad Recipe

This Cranberry Celebration Salad is a copycat version of Krogers recipe. It's easy to make, delicious and a wonderful addition to any holiday dinner.

Ingredients

  • 1 (15 ounce) can of crushed pineapple
  • 1 (15 ounce) can of cranberry sauce with whole cranberries
  • ½ cup cranberry juice
  • 2 tablespoon lemon juice
  • 3 oz package of Cherry JELL-O gelatin
  • ½ cup walnuts chopped fine

Instructions

  • Drain the pineapple and reserve juice. There won't be hardly any juice, so don't be alarmed. Place pineapple juice, cranberry juice, and lemon juice in a pot on the stove. Bring it to a quick boil, stirring the entire time so it doesn't burn.
  • Then add in the jello, and continue stirring. Next, add in the cranberry sauce and continue stirring until it is mixed well.
  • Put into a mixing bowl and place in the refrigerator for about 1.5 hours or until it starts to set up.
  • Then add walnuts and pineapple. Stir well. Place back in the refrigerator to set up. This will not set up like jello, but it will harden some. You'll want to stir it before serving
