Cowboy Caviar - Black-Eyed Pea Appetizer

Ingredients

  • 1 (15.5 ounce) can black beans, drained
  • 1 (15.5 ounce) can black-eyed peas, drained
  • 1 (10 ounce) can Rotel tomatoes with green chilis, drained
  • 1 (15.25 ounce) can of sweet corn, drained
  • ½ medium onion diced
  • ¼ medium green bell pepper finely chopped
  • ¾ cup chopped cilantro
  • ½ cup chopped pickled jalapeño peppers
  • ½ teaspoon garlic salt
  • 1.5 cups Italian salad dressing

Instructions

  • Mix all ingredients in a large bowl and combine well. Let chill in the refrigerator for about 3 hours before serving.

Notes

The longer it's in the fridge the better it is. You can add more Italian dressing if you need.
