Cottage Cheese Biscuits

These biscuits are simple, fluffy and delicious!

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne
  • 1/2 teaspoon celery seeds
  • 1/4 cup or 4 tablespoons cold butter shredded or cut in small pieces
  • 1/2 cup small curd cottage cheese
  • 1 cup buttermilk

Instructions

  • Whisk together flour, baking powder, baking soda, salt, cayenne and celery seeds in a large bowl. Cut butter into flour until resembles coarse crumbs. We just use a spoon to do this. Mix in the cottage cheese and buttermilk to form a ball.
  • Turn out on a floured surface, knead a few times and cut out with biscuit cutter. (we just use a glass to cut them out).
  • Bake in a preheated 425 degree oven on an ungreased baking sheet for 15 to 20 minutes. You can brush biscuit tops with melted butter before cooking.

Notes

This recipe makes 10-12 biscuits depending on the size that you cut them.
