Cornbread Butter Swim Biscuits

Ingredients

  • 1 stick butter or 1/2 cup or 8 tablespoons
  • 1 1/2 cups all-purpose flour
  • 1/2 cup yellow cornmeal
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 tablespoons white granulated sugar
  • 1 1/2 cups buttermilk

Instructions

  • Place the stick of butter in an 8 x 8 or 9 x 9 baking dish and melt in the oven or microwave.
  • In a mixing bowl whisk together the flour, cornmeal, baking powder, baking soda, salt and sugar. Add the buttermilk and mix with a spoon until all ingredients are wet.
  • Pour batter into baking dish with melted butter and spread evenly in pan with a spoon.
  • Score batter with knife to make 9 biscuits.
  • Place in preheated 425 degree oven for 25 to 30 minutes or until centers are done and top is browned. Makes 9 biscuits.
