Chocolate Chip Butter Swim Biscuits

If you love butter swim biscuits, you will love this chocolate chip version. Easy and a great treat with coffee.

Ingredients

  • 1 stick or 8 ounces or 1/2 cup unsalted butter melted
  • 2 cups all-purpose flour
  • 1 tablespoon white granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 1/2 cups buttermilk

Ingredients for Glaze Topping

  • 1 cup powdered sugar
  • Milk
  • 1 teaspoon vanilla extract Optional

Instructions

  • Place butter in an 8 x 8 or 9 x 9 baking dish and melt in oven or microwave. Set aside.
  • Whisk together flour, sugar, baking powder, baking soda and salt in a mixing bowl. Stir in chocolate chips.
  • Add buttermilk and stir with a spoon until batter comes together in a ball. Place batter in the melted butter and spread with floured hands or a spoon to cover the dish.
  • Score the batter with a knife to make 9 biscuits. Bake in a preheated 425 degree oven for 25 to 30 minutes until middles test done and tops are browned.
  • Let cool before adding glaze topping. Makes 9 biscuits.

Instructions for Glaze Topping

  • Whisk together enough milk with the powdered sugar to bring it to pouring consistency, add vanilla and stir. Drizzle over cooled biscuits.

Notes

If using salted butter, leave out the salt in the recipe. You don’t have to add the glaze.
