Cajun Macaroni and Cheese

Ingredients

  • 1 lb Andouille Sauage can use smoked sausage or smoked turkey sausage
  • 1 16 ounce box of elbow macaroni
  • 3 to 4 cups of shredded sharp cheddar cheese
  • 1/2 stick of butter or 1/4 cup sliced
  • 1 12 ounce can of evaporated milk
  • 1/2 teaspoon of Cajun seasoning
  • 1/2 teaspoon of smoked paprika
  • 1/2 teaspoon of black pepper

Instructions

  • Preheat oven to 350. Brown andouille sausage over medium heat until sausage starts to brown. Cook pasta according to directions on box. Drain pasta. Mix pasta and seasonings together. Stir in sausage.
  • In a casserole dish, pour in half the pasta mixture. Top with half the butter and a layer of shredded cheese. Top with the remainder of pasta and top with the remainder of the butter and cheese. Pour evaporated milk over the entire dish. Bake for 35-45 minutes until done.
