Busy Day Cake

This cake is so simple! It doesn't even require any eggs. It will become a family favorite!

Ingredients

  • 1/4 cup butter softened
  • 1 cup brown sugar
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon vanilla extract

Topping Ingredients

  • 3 tablespoons butter softened
  • 1/2 cup brown sugar
  • 2 tablespoons milk
  • 1/2 cup shredded sweetened coconut
  • 1 teaspoon vanilla extract
  • 1/2 cup pecans

Instructions

Cake Instructions:

  • Cream butter and sugar with a mixer. Add in buttermilk and vanilla extract. Whisk together baking soda and flour and add to the other ingredients. Continue mixing until all ingredients are wet.
  • Spray a 8 x 8 baking pan and add batter. Bake in a preheated 375- degree oven for 30 minutes or until center tests done. Add topping while the cake is still warm.

Topping Instructions:

  • Mix soft butter, sugar, and milk with a spoon. Add coconut and vanilla extract. Spread over cake. Sprinkle on pecans. Place the cake under the broiler for about one minute or until the topping is bubbling.
