This Brown Sugar Loaf Cake is one of our favorites. We add a maple cream cheese frosting and it really takes this cake to the next level. This recipe makes 2 loaf cakes.
1cupof chopped pecansadd extra for topping of cakes
Maple Cream Cheese Frosting Ingredients
8ouncesof cream cheesesoftened to room temperature
1stick of buttersoftened
3cupsof powdered sugar
1teaspoonof maple flavoring
Instructions
Cake instructions:
Preheat oven to 350 degrees. Cream butter and shortening together with a mixer, gradually adding brown and white sugar until light and fluffy.
Add eggs one at a time, beating well after each addition. Combine dry ingredients in a separate bowl, once combined, add to the wet mixture a little at a time, alternating between adding whipping cream, too.
Once all is combined add the vanilla extract and the pecans. Pour into two greased 9X5 baking pans and cook for 50 minutes and test for doneness.
Pound cakes vary; this took one hour for my oven, so start testing at 50 minutes. Let cool and add the maple frosting.
Frosting Instructions:
Combine all ingredients and mix until smooth, top both loaves with frosting and add chopped pecans.
