Brown Sugar Loaf Cake

This Brown Sugar Loaf Cake is one of our favorites. We add a maple cream cheese frosting and it really takes this cake to the next level. This recipe makes 2 loaf cakes.

Ingredients

  • 1 cup of butter softened (2 sticks)
  • ½ cup of shortening
  • 2 cups of brown sugar
  • 1/2 cup of white sugar
  • 5 eggs
  • ½ teaspoon of baking soda
  • 3 cups of all-purpose flour
  • 1 cup of whipping cream
  • 2 tablespoons of vanilla
  • 1 cup of chopped pecans add extra for topping of cakes

Maple Cream Cheese Frosting Ingredients

  • 8 ounces of cream cheese softened to room temperature
  • 1 stick of butter softened
  • 3 cups of powdered sugar
  • 1 teaspoon of maple flavoring

Instructions

Cake instructions:

  • Preheat oven to 350 degrees. Cream butter and shortening together with a mixer, gradually adding brown and white sugar until light and fluffy.
  • Add eggs one at a time, beating well after each addition. Combine dry ingredients in a separate bowl, once combined, add to the wet mixture a little at a time, alternating between adding whipping cream, too.
  • Once all is combined add the vanilla extract and the pecans. Pour into two greased 9X5 baking pans and cook for 50 minutes and test for doneness.
  • Pound cakes vary; this took one hour for my oven, so start testing at 50 minutes. Let cool and add the maple frosting.

Frosting Instructions:

  • Combine all ingredients and mix until smooth, top both loaves with frosting and add chopped pecans.
