Black-Eyed Pea Chili

Ingredients

  • 1 green pepper chopped
  • 1 can of rotels drained
  • 1/2 cup of chopped onion
  • 1 teaspoon of minced garlic
  • 1 lb breakfast sausage
  • 2 cups of frozen black-eyed peas
  • 1 15 ounce can of tomato sauce
  • 1 cup of beef broth
  • 1 teaspoon smoked paprika
  • 1 1/2 teaspoons of chili powder
  • 1 teaspoon of ground cumin

Instructions

  • In a skillet, cook breakfast sausage, onion and green pepper and minced garlic until sausage is no longer pink. Drain any grease.
  • Combine sausage mixture and rest of ingredients in a 4 quart crock pot let cook for 4-6 hours on low.
  • Serve with sour cream, cheese and saltine crackers.
