- 1 green pepper chopped
- 1 can of rotels drained
- 1/2 cup of chopped onion
- 1 teaspoon of minced garlic
- 1 lb breakfast sausage
- 2 cups of frozen black-eyed peas
- 1 15 ounce can of tomato sauce
- 1 cup of beef broth
- 1 teaspoon smoked paprika
- 1 1/2 teaspoons of chili powder
- 1 teaspoon of ground cumin
In a skillet, cook breakfast sausage, onion and green pepper and minced garlic until sausage is no longer pink. Drain any grease.
Combine sausage mixture and rest of ingredients in a 4 quart crock pot let cook for 4-6 hours on low.
Serve with sour cream, cheese and saltine crackers.
