Baked Pumpkin Hand Pies

These Baked Pumpkin Hand Pies have a flaky golden crust filled with a delicious spiced pumpkin filling. They’re easy to make, baked in the oven, and perfect for fall gatherings or Thanksgiving.

Ingredients

Crust:

  • 2 bought pie crusts

Pie Filling:

  • 3/4 cup 100% canned pumpkin
  • 1 egg
  • 3 tablespoons brown sugar
  • 2 teaspoons all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • Pinch of salt

Powdered Sugar Glaze - Optional

  • 1 cup white powdered sugar
  • 3 to 4 tablespoons milk I use 2%
  • 1 teaspoon vanilla extract optional

Instructions

  • Mix all pie filling ingredients together with a spoon.
  • Roll out dough and using a 5 inch round bowl make the round pies. Place on baking sheet on parchment paper.
  • Add about a tablespoon of filling to each pie.
  • Fold rounds over filling and crimp with a fork. Brush each pie with egg yolk. Can sprinkle on extra cinnamon.
  • Bake in preheated 375 degree oven 20 to 25 minutes until brown on tops. Makes 10 to 12 pies.

Glaze Instructions

  • Mix all ingredients until the consistency you need. You may need more sugar for it to be thicker. Pour over hand pies.

Notes

Can make them larger or smaller.
