Applesauce Muffins

Applesauce muffins are great any time with coffee. This is an easy muffin recipe and a great way to use up applesauce.

Ingredients

  • 1 stick butter or margarine or 8 tablespoons or 1/2 cup softened
  • 1/2 cup white granulated sugar
  • 2 eggs
  • 1 cup applesauce
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 tsp. baking soda
  • 1 tsp. vanilla extract
  • 2 cups all-purpose flour
  • 1 cup raisins (optional)
  • 1 cup nuts optional walnuts or pecans

Instructions

  • Preheat oven to 350 degrees. Cream butter, sugar, and egg. Add remaining ingredients and mix well. Spray muffin tin. Bake in preheated 350 degree oven for 30 to 35 minutes.
