2cupspeeled and diced apples(I used red delicious)
2eggs
1/2cupchopped nutspecans or walnuts I used walnuts.
Maple Frosting Ingredients:
3/4cupbrown sugar
3 to 4tablespoonsmilk
4tablespoonsbutter
1teaspoonmaple extractcan use vanilla extract
1cuppowdered sugar
Instructions
Whisk together flour, sugar, baking powder, baking soda, salt, ginger, cinnamon, cloves and melted butter in a mixing bowl. Stir in sour cream, vanilla extract, diced apples and eggs. Add nuts. Spray a 9 x 9 baking pan with cooking spray. Bake in a preheated 350 degree oven for 35 to 40 minutes until center tests done. Makes about 12 servings.
Maple Frosting Instructions:
Combine brown sugar, milk and butter in a pan on top of stove. Bring to a boil, stirring often, and boil for 1 minute. Remove and stir in maple extract and powdered sugar. Drizzle or spread over cake. Can add more milk if needed to keep frosting the spreading consistency you want.
Notes
I added the chopped nuts on top of the cake. You can add to batter or top.
