Apple Walnut Cake with Maple Frosting

This apple walnut cake is made in a 9X9 so it's perfect for a small gathering.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3/4 cup white granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 4 tablespoons butter melted
  • 3/4 cup sour cream
  • 1 teaspoon vanilla extract (could use maple extract)
  • 2 cups peeled and diced apples (I used red delicious)
  • 2 eggs
  • 1/2 cup chopped nuts pecans or walnuts I used walnuts.
  • Maple Frosting Ingredients:
  • 3/4 cup brown sugar
  • 3 to 4 tablespoons milk
  • 4 tablespoons butter
  • 1 teaspoon maple extract can use vanilla extract
  • 1 cup powdered sugar

Instructions

  • Whisk together flour, sugar, baking powder, baking soda, salt, ginger, cinnamon, cloves and melted butter in a mixing bowl. Stir in sour cream, vanilla extract, diced apples and eggs. Add nuts. Spray a 9 x 9 baking pan with cooking spray. Bake in a preheated 350 degree oven for 35 to 40 minutes until center tests done. Makes about 12 servings.
  • Maple Frosting Instructions:
  • Combine brown sugar, milk and butter in a pan on top of stove. Bring to a boil, stirring often, and boil for 1 minute. Remove and stir in maple extract and powdered sugar. Drizzle or spread over cake. Can add more milk if needed to keep frosting the spreading consistency you want.

Notes

I added the chopped nuts on top of the cake. You can add to batter or top.
