Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup white granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup apple juice can use 1 cup water
  • 1 tablespoon apple cider vinegar
  • 5 tablespoons olive oil can use vegetable or Canola
  • 1 1/2 teaspoons vanilla extract
  • 1 cup peeled and shredded or chopped apples I used Gala. You can use what you like
  • 1/2 cup chopped walnuts can use pecans

Instructions

  • Whisk together flour, sugar, baking soda, salt, cinnamon and nutmeg in a bowl.
  • Add apple juice, apple cider vinegar, olive oil and vanilla extract. Stir with a spoon. Stir in apples and nuts.
  • Spray a 8x8 or 9x9 baking dish with cooking spray and add the batter.
  • Bake in a preheated 350 degree oven for 40 to 45 minutes until center tests done.
  • Let cool for 10 to 15 minutes. Sprinkle powdered sugar on top or can frost with your favorite icing.
  • Makes about 9 pieces of cake depending on how you slice it. I set the serving at 4, since people will probably have 2 pieces.
