Apple Fritter Butter Swim Biscuits
These Apple Fritter Butter Swim Biscuits are a great way to start the day. Made in an 8X8 and perfect for breakfast or brunch.
Servings: 6 servings
For the Apple Filling:
- 2 cups peeled cored, small diced Granny Smith apples
- 2 tablespoons of butter
- 2 tablespoons light brown sugar packed
- 1 teaspoon ground cinnamon
- 1 teaspoon of vanilla extract
For the Biscuits:
- 2 ½ cups all-purpose flour
- ¼ cup granulated sugar
- 1 tablespoon baking powder
- ½ cup 1 stick salted butter, melted
- 2 cups of buttermilk
For the Glaze:
- 1/2 teaspoon of vanilla
- 1 cup powdered sugar
- 3 tablespoons milk
Filling Instructions
In a large skillet over medium heat, combine apples, butter, brown sugar, and cinnamon.
Stir constantly until the butter and sugars have melted. Bring to a simmer and simmer for 8-10 minutes, continue to stir until the apples have softened but still have some texture left to them. Take off the heat. Stir in vanilla.
Biscuit Instructions
Add flour, baking powder, sugar, and to a medium bowl. Use a whisk to sift ingredients. Pour in the buttermilk and stir until mostly combined, being careful not to overwork the batter. Gently stir in apple mixture.
Pour the melted butter into your baking dish and then place the dough on top of the butter and use a spatula (or your hands) to evenly spread the dough out to the edges of the pan.
Cut the unbaked dough into 9 squares (3×3 pattern). Bake for about 15 minutes, rotate baking dish and return to oven for another 15-20 minutes. Tops should be golden brown and when you insert with a toothpick it comes out clean.
