Apple Butter Raisin Cake

- 1 stick butter or 1/2 cup or 8 tablespoons softened
- 1 teaspoon vanilla extract
- 1 1/2 cups sugar
- 2 eggs
- 1 1/2 cups apple butter
- 1/2 cup buttermilk
- 2 teaspoons baking soda
- 2 1/2 cups all purpose flour
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon nutmeg
- 1 cup raisins
- 1 cup nuts optional I used pecans
Maple Glaze:
- 3/4 cup brown sugar
- 3 to 4 tablespoons milk
- 1/4 cup butter or 4 tablespoons
- 1 teaspoon maple extract
- 1 cup powdered sugar
Cream butter and sugar. Add vanilla, eggs, apple butter and buttermilk. Blend well with mixer.
Whisk together dry ingredients.
Mix dry ingredients with wet ingredients then add raisins and nuts.
Spray bundt pan or 9 x 13 baking dish with cooking spray. Bake in preheated oven at 350 degrees for about one hour.
Maple glaze instructions:
Combine brown sugar, milk and butter in a saucepan and bring to a boil on top of the stove. Boil for one minute stirring constantly. Remove and add maple extract and powdered sugar. Stir until spreadable.
Drizzle over cake. Can add more milk if glaze starts to harden.
