Ingredients
2cupsall-purpose flour
1teaspoonbaking soda
1stick butter or 1/2 cup or 8 tablespoonsmelted
1/2cupbrown sugar
1/2cupsour cream
2eggs
1cupcookedmashed sweet potatoes
1teaspoonvanilla extract
Swirl for Batter:
1/2cupbrown sugar
1teaspoonground cinnamon
1/8teaspoonnutmeg
1cupchopped nutspecans or walnuts (optional)
Glaze for Cooked Bread
3/4cuppowdered sugar
3tablespoonsmilkmore or less
1/2teaspoonvanilla extract
Instructions
Whisk together flour and baking soda in a bowl and set aside. Combine melted butter, brown sugar, sour cream, eggs, mashed sweet potatoes and vanilla extract in a large bowl mixing with a spoon. Add flour mixture to sweet potato mixture and stir with spoon to combine. Spray a 9 x 5 bread pan with cooking spray and add mixture to pan. Add swirl
Swirl Instructions
Whisk ingredients together and spread over sweet potato mixture in pan. See photos below. Take a knife and swirl mixture into the batter. Bake in preheated 350 degree oven 55 to 60 minutes checking until done as ovens vary. Remove from oven and let cool. Can drizzle on glaze.
Glaze Instructions
Whisk together and drizzle over cooled bread.
Notes
I use a fresh sweet potato in this recipe but you could use canned.
