Pumpkin Waffles

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup quick-cooking oats
  • 1 tablespoon baking powder
  • pinch salt
  • 1 teaspoon pumpkin pie spice
  • 3 tablespoons white granulated sugar
  • 1 cup milk
  • 1 egg
  • 2 tablespoons butter melted
  • 1 teaspoon vanilla extract
  • 1/2 cup pure 100% pumpkin puree
  • 1/2 cup chopped nuts pecans or walnuts, (optional)

Instructions

  • Whisk together the flour, oats, baking powder, salt, pumpkin pie spice and sugar in a large bowl. Add milk, egg, butter, vanilla extract and pumpkin puree. Stir well with spoon. Fold in nuts.
  • I use about 1/4 cup of waffle mixture for each waffle.
