1 to 1 1/2poundsground beef
1onionpeeled and chopped
1green pepperchopped
115 ounce can 100% pure pumpkin
110 ounce can tomatoes and green chilis
115.5 ounce can chili beans, undrained
115 ounce can black beans, undrained
114.5 ounce can diced tomatoes, undrained
1/2cupwater
1/2teaspoonminced garlic
1teaspoonground cinnamon
1/2teaspoonginger
1/4teaspoonallspice
1/4teaspoonnutmeg
2teaspoonschili powder
1/2teaspoonsalt
1/4teaspoonblack pepper
Instructions
Brown ground beef, onion and green pepper in a large pot on top of the stove. Drain.
Add remaining ingredients and simmer 30 to 45 minutes. If too thick add a little more water.
Serve with a dollop of sour cream and your favorite shredded cheese on top.
Notes
This could be made in the crock pot, too. Just brown your ground beef, onion and green pepper. Drain. Add all ingredients and cook on high for about 3 hours or low 6 hours. Be sure to check to see if you need to add more water.
