Pumpkin Bread

This is a great recipe and one you'll make over and over again.

Ingredients

  • 2 eggs
  • 1 cups real pumpkin i use canned
  • 1/2 cup cooking oil I use Olive
  • 1 1/3 cups white sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoons baking powder
  • 1/2 teaspoons baking soda
  • 1/2 teaspoons salt
  • 1/2 teaspoons ground cinnamon
  • 1/2 teaspoons ground nutmeg
  • 1/2 teaspoons ground cloves
  • 1/2 cup of pecans, chopped optional

Instructions

  • Preheat oven to 350 degrees.
  • Spray a 9x5 loaf pan with cooking spray. Mix pumpkin, oil, sugar and eggs. Combine rest of ingredients and stir into pumpkin mixture until well blended. 
  • Top loaf with pecans or you can fold them into mixture. (optional)
  • Bake 45 minutes to 1 hour. Let sit 10 minutes and remove from pan.

Notes

Top of loaf should spring back when pressed. Can add nuts, raisins or mini chocolate chips.
