Crock Pot Beef and Beer

Ingredients

  • 1 to 1 1/2 pounds beef stew meat
  • 1 medium onion peeled and cut in rings
  • 2 tablespoons cooking oil
  • 1 4 ounce can mushrooms, drained (optional)
  • 1 cup of either chicken or beef broth
  • 1 cup beer
  • 2 teaspoons brown sugar
  • 1 bay leaf
  • 1/4 teaspoon thyme
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon red wine vinegar
  • 1/4 teaspoon dried parsley

Instructions

  • Brown the stew meat and onions in the cooking oil on top of the stove. Add to the crock pot. Whisk together the mushrooms, broth, beer, brown sugar, thyme, black pepper, salt, vinegar and parsley. Pour over the stew meat and onions. Add the bay leaf. Cook on low for 5 to 6 hours or high for 2 to 3 hours. Remove bay leaf. Serve over pasta or rice. Garnish with chopped green onions or fresh parsley if desired. Makes about six servings.

Notes

I usually make my rice or pasta and just pour the stew meat and gravy over it in a large bowl to serve. If you want the gravy thicker remove and thicken with a little cornstarch on top of the stove before serving.
