Blue Cheese Broccoli Casserole

- 2 10 ounce packages of broccoli florets
- 4 tablespoons of butter divided
- 2 tablespoons of all purpose flour
- 1/2 cup of whipping cream
- 1/2 cup of milk
- 4 ounces of cream cheese softened and cubed
- 5 ounces of blue cheese divided
- 1 sleeve of Ritz Crackers crumbled
- pepper to taste
Cook broccoli according to package directions and set aside.
In a heavy saucepan melt two tablespoons of butter over low heat, add in flour while continuously stirring. Next gradually add in the milk and the whipping cream and increase heat to medium. Continue to stir and add cream cheese and about 4 ounces of blue cheese and pepper. Stir until cheese is completely melted and then add in the cooked broccoli.
Place everything in a sprayed casserole dish, cover and refrigerate. You can refrigerate for 2-3 hours or overnight if you want to prepare the day before.
Remove from fridge and add buttered crumbs for topping (2 tablespoons of melted butter combined with crumbled Ritz crackers). Sprinkle remainder of the blue cheese on top. Cook uncovered for 25-30 minutes on 350.
